Crispy Garlic Prawns
This is a recipe you get down and dirty with! It’s a family favourite and is super easy to make. I always use Sainsbury's Raw Shell On Jumbo King Prawns, Taste the Difference (£8.50) – usually 16 prawns come in a pack. They’re so, so big and juicy.
WHAT YOU NEED
16 raw shell-on jumbo king prawns
½ tsp black pepper
½ tsp ginger powder
½ tsp white sugar
1 tbsp fish sauce or salt
2 red chillies
2 garlic cloves
3 spring onions
Oil, for frying
3 ½ tbsp cornflour
Salt, honey and black pepper to taste
STEPS
Remove the head and legs of the prawns. Then de-vein.
Marinade your prawns in fish sauce/salt, ginger powder, sugar and black pepper. Leave to marinade for 30 minutes.
Drain excess water, then coat in cornflour.
Heat the oil, then fry a few prawns at a time for 45 secs – 1 minute. (TIP: Drop in a piece of bread, if it browns in 1 minute, the oil is hot enough).
In a saucepan, fry the chopped spring onions, garlic and chillies. Then season with salt and black pepper. After 2 minutes, add the prawns.
