Warm Chickpea and Avocado Salad
Here’s a healthy favourite of mine - a warm Chickpea and Avocado Salad. I usually eat this with a side of prawns, salmon, chicken or lamb.
WHAT YOU NEED
1/2 - 1 onion
1 Avocado
1 Red bell pepper
2 handfuls of cooked chickpeas
1 handful of sweetcorn
Olive oil, basil, salt and pepper to season.
STEPS
In a big sauce pan, fry one onion for 2 mins and season with salt and black pepper.
Now add the chickpeas and let it cook for 3 mins, then add the red peppers and let it cook for a further 3 minutes.
Now add the avocado, then add salt, black pepper and basil to taste.
