Spicy garlic chicken in a chilli soy glaze

Here’s my easy and tasty chicken marinade recipe, with groceries from OjaHQ.

WHAT YOU NEED

For marinade

  • 9 drumsticks

  • 2 tsp Garlic powder

  • 1 tsp Salt

  • 1 tsp Chilli powder

  • 1 tsp Paprika

  • 1 tbsp Olive oil, drizzle

  • 1 tsp all purpose seasoning (optional)

  • 1 red bell pepper, diced

  • 1 red onion, diced

  • 2 spring onions, sliced

For glaze

  • 1 tbsp soy sauce

  • 1 tbsp soft brown sugar

  • 1 tbsp wine vinegar

  • 1 tsp chili powder (optional)

  • Water

STEPS

  1. Clean the chicken and score, then pat dry with paper towels. Now add the garlic powder, salt, chilli powder, paprika, all purpose and then olive oil. Now mix in until chicken is covered. Marinade overnight, or for 6 hours.

  2. Pre-heat oven to 180°C, and bake for 25-30 minutes, or until the skin is nice and golden.

  3. Separately, in a heated frying pan, flash fry the diced onions, bell peppers and spring onions.

  4. Add the glaze, then add the chicken. Simmer for 2 minutes, and sprinkle a bit of water. Ready to be served!
