Chilli Garlic Coca-Cola Wings

One thing I love about food, is the fact that it tells you something about the stories behind some of our favourite dishes. I remember when I first tried cola chicken, it was in TGI Fridays and I assumed it was an American dish. However, a colleague of mine from Hong Kong informed me that it's actually a popular dish in China. After doing some homework, I realised that the birthplace of this recipe is still up for debate, with various sources contending that the origin is between the US, China and Taiwan.My assumption of the dishes’ origin - the US -  is one of the reasons why I started this blog, I feel it’s quite important to find out the history behind some of our favourite dishes, or we risk erasing different cultures and their traditional dishes. WHAT YOU NEED

  • ½ onion diced finely
  • 900g / 7 pieces of Chicken wings (chop in two so in total there'll be 14 pieces) - I bought my wings from Iceland for £1.50
  • 3 Garlic cloves finely grated 
  • 1 Scotch Bonnet grated 
  • 4 tbsp dark Soy sauce
  • 1 tsp salt
  • 1 can Coca-Cola
  • 4 tbsp of sesame oil or sunflower oil (if you don't want the nutty taste) 

STEPS

  1. Pour the soy sauce into a bowl. Add in the chopped onions, scotch bonnet, salt and garlic, then stir. 
  2. Chop the chicken wings into two parts. Now add the soy sauce mix to the chicken and toss, then leave to marinade overnight or for 2 hours, if you don't have a lot of time on your hands. 2018-08-04 12.38.13 1.jpg 
  3. Now, place the oil into a frying pan, then heat.
  4. Once heated, add the chicken wings to fry on each side for five minutes or until golden.2018-08-04 12.38.13 2.jpg
  5. Once cooked, add the coca-cola and bring to boil in the frying pan, on a medium-high heat. (TIP: If there's excess oil, drain the oil away, before adding the coke)
  6. Now taste, and add some salt and chilli to taste - only if needed. 
  7. Once the sauce has thickened, place in a plate, and add some onions, spring onions or chilli to garnish. Enjoy!
