Prawn, spinach and pancetta frittata

Recently, I have been trying to reduce the amount of food I waste as well as save more money. If you're trying to do the same, frittatas are a great way to do this, as this easy recipe allows you to effortlessly explore with different ingredients. WHAT YOU’LL NEED

  • Frying pan
  • Spoon
  • Chopping board
  • Knife
  • Oven-proof pan or sandwich tin

INGREDIENTS

  • 6 medium eggs
  • 1 tsp
  • 1 Knorr chicken stock cube
  • 60ml double cream
  • 2 handfuls of fresh spinach
  • 2 tomatoes
  • 90g cooked prawns
  • 100g pancetta
  • 4 mushrooms
  • 1/4 scotch bonnet (optional)
  • 1/2 onion

STEPS

  1. Pre-heat the oven to 190C (Fan) / Gas 5. Then lightly grease a 20cm sandwich tin, or use an ovenproof pan.
  2. Chop the tomatoes, onions, red pepper, mushrooms and scotch bonnet, and put to a side.
  3. Separately, beat the eggs in a bowl. Then add the salt, double cream and crumble in the stock.
  4. Now heat the frying pan and fry the pancetta. (I don’t add any oil as there’s enough grease from the pancetta to use for the vegetables).
  5. Pour out any excess oil produced form the pancetta, then fry the onions. Once the onions have softened, add the mushrooms, spinach and then the tomatoes.
  6. Lastly, add the prawns (I put this last so it does not overcook).
  7. Now place the vegetable mix in the sandwich tin, then pour the egg on top. Bake for 35 minutes until set all the way through. If its still runny, then place in the oven for another few minutes. If you're using a wider oven pan, you'll only have to use 30 minutes as the eggs will be able to cook quicker.
  8. Once ready cut into wedges and store in the fridge. Poke the middle to make sure its fully cooked (it won't be runny).

TIPS:

  • Use an ovenproof pan- this will
  • make your life much more easier, as it will cook quicker and the egg won't leak out of the container
  • Drain any excess water from the vegetables, when frying, as this can make the frittata runny.
  • Explore with leftovers– Christmas is coming up, so try and reuse any loose vegetables or ingredients in your fridge and see what flavours you can create!
